A competition Grade Tie Guan Yin. Though Legend has it that this tea is picked by monkeys, "Monkey Picked" actually means "most proud". This is the tea that the merchant or garden has "great pride" in. Monkey Picked should be prepared "Gongfu style". Gongfu style is basically; more tea, less time & and less water. Use a small brewing device (like a Gaiwan) add a generous amount of tea (anywhere from 3 to 10 grams) add water that is about 195 degrees and steep 30 seconds the first time. You should be able to get several steepings before you start steeping longer. Depending on the amount of tea and length of steeping; you should be able to get 10 to 20 steepings. Though the last steeping would be in minutes rather than seconds. This is definitely a great sipping tea!
