White Tea

White tea gets its name from the silvery white hairs that cover the young buds when they are harvested. Until recently, white tea was produced only in a small region of Fujian, China, from a couple of specially bred varieties of the tea tree. It is labor intensive to produce and the yield is small, but the tea has a wonderfully clean flavor and natural sweetness.
