Oolong Tea

While black teas are fully oxidized and green teas are dried before they oxidize at all, oolongs span the entire range in between. Some are very lightly oxidized (10-20%), with a body that is very similar to green tea, but with a brighter, more floral aroma and less grassy flavor. On the other hand, some are more heavily oxidized, with a body more like a delicate black tea. In each case, oolongs offer a range of flavors and aromas that are not found in any other type of tea.
